Last week I was really craving some good ole pasta. It's literally been MONTHS since I made pasta. I try to stay away from it, because I will eat an entire pot of pasta on my own if you let me. So not good for the diet!
I didn't have a meal planned for dinner one night, though. Seeing as hubby and I are really trying to cut back and stay on a budget, I didn't want to go out to eat. So I got creative.

I had pasta…tons of broccoli from my local produce order…lemon…parmesan cheese…garlic. My mind immediately went to pesto. A delicious broccoli pesto over whole wheat pasta. MMmm. Then my eye caught a a very brown avocado on the counter that was on its way out.
Interesting idea, I thought to myself.
{Avocados have kind of become like garlic and onions are for me. I add them to just about any recipe I possibly can. Tee Hee.}
Interesting it was…and perfectly delicious. I've never had avocado in a pesto before, but it added a wonderful creamy surprise to the pesto. It was SO good.

Ingredients:
- About 5 cups raw broccoli, cut into small florets
- 1 avocado, sliced
- 1/2 box of whole wheat pasta of your choice
- 3-4 cloves of garlic, peeled
- 2/3 cup toasted sliced or chopped almonds
- 1/3 cup Parmesan or Italian-style cheese
- extra virgin olive oil
Directions:
- Get your almonds in the oven toasting until just fragrant and browning (I just bake in oven on about 350).
- Cook pasta according to box directions. Drain.
- Boil 3/4 cup of water + a pinch of salt in a large pot.
- Once boiling, add the broccoli florets to the pot. Cover and cook for about 1 minute. You want the broccoli to be slightly cooked, but still retain some crisp veggie-like quality. (Unless you like soggy broccoli, but I prefer crisp.)
- Drain broccoli and rinse with cold water in a strainer.
- Combine broccoli and pasta in same bowl.
- Place 2 cups of the broccoli, garlic, toasted almonds, cheese, and 1/4 cup olive oil in a food processor. Pulse until smooth, drizzling in extra olive oil as necessary until you get the correct consistency.
- Toss the broccoli and pasta mixture with the pesto.
- Taste test.
